Application of Neotame

Neotame is a functional sweetener. It has a pure sweetness and harmonious sweetness, very close to aspartame, without the bitterness and metallic taste that other strong sweeteners often bring. It is 7000-13000 times sweeter than sucrose and 30-60 times sweeter than aspartame. The energy value is almost zero.

1. Application in canned fruit
Reduce the overall proportion of syrup, thereby reducing the phenomenon of fruit floating, without adding more fruit. In GB2760, it is the only sweetener allowed to be used in canned products. Neotame shows good stability during the heat treatment of canned products. Replace 40%-50% of sucrose to reduce product costs. The product shelf life is 12-24 months. Flavor: sweet orange, bayberry, loquat, lychee, pineapple, longan. Recommended sweetness multiple: 6500-7000.
2. Application in cold fruits
 
Suggestions for the use of neotame: ⑴ The amount of neotame (calculated relative to the sweetness of sucrose) accounts for about 30% of the total sweetness. It can be used in combination with sweeteners such as sugar, aspartame, stevia, and sodium cyclamate. ⑵ The multiple of neotame used in plums is about 6500-7000 times, and it can be used more than 7500 times in other cold fruits with less acidity. ⑶ The amount of acid can be appropriately reduced. If no additional acid is needed, more acid can be removed when washing the fruit embryo as much as possible to balance the sweet-acid ratio.
 
3. Application in various beverages
 
⑴ Carbonated beverages: Neotame can last for 16 weeks in cola-type carbonated beverages. It is consistent with the shelf life of low-energy carbonated beverages sold on the market. It can also be used in lemon soda.
 
⑵ Non-carbonated beverages: Neotame can be used in hot-filled lemon tea, solid powdered beverages, yogurt and other foods, and its properties are very stable and of good quality in these foods.
⑶ Solid beverages: Partially replace sugar at a ratio of 30%, which can reduce costs as much as possible without changing the taste of the original full-sugar formula; replace aspartame in the formula, and the label does not need to indicate that it contains phenylalanine; premix with powdered sugar or other powder additives at a ratio of 1-2%: Tests show that concentrated neotame premix can be properly dispersed and adsorbed on the surface of the carrier; in the production of solid beverages, premixing trace amounts of raw materials such as pigments and flavors is very common, so the use of neotame is just a simple addition process; at the same time, mixing pigments and neotame in sugar can be used to visually observe the premix to ensure sufficient mixing; the mixing time must be sufficient to ensure dispersion, but the time must be controlled to reduce powder flying.
4. Application in dairy beverages
The solids of the product itself are relatively rich. Even if the use of sweeteners may cause a small loss of product consistency, it can be supplemented by dairy stabilizers; pH 4.0-4.5 is most suitable for neotame stability; neotame is relatively stable during the fermentation process; using neotame to replace part of the sucrose in these products reduces calories and potentially increases nutritional value (milk replaces the volume of sucrose). The result is a healthier consumer product.

5. Application in jelly
The international minimum solid content requirement for jelly is ≥15, and the sweetness of jelly is often 18-22 degrees for the best taste; therefore, the part of the sugar content exceeding 15 degrees can be adjusted with sweeteners. For example: using neotame to replace 3 degrees of sugar, the actual usage is: 3÷8000×100%=0.03755 (w/w); the product tastes sweet and pure, and can reduce the total cost of the product.
6. Application in baked goods
It can partially replace sugar by 30% to make low-sugar products with lower cost; it can be mixed with sugar alcohols to make sugar-free products with a healthy concept; neotame presents satisfactory flavor and texture characteristics in baked goods and has good stability; fillers: wheat bran, wheat fiber, maltitol, maltodextrin.
7. Application in chewing gum
Application method: Add neotame to the original formula, recommended dosage: sugar coating: 15ppm, gum base: 40ppm
If you need to balance the cost, you can reduce the weight of the chewing gum by 7-8%.
Application advantages: There is a longer sweetness delay, which meets the need to prolong sweetness. The sweetness of the product is related to the mint flavor. As long as the sweetness persists, the mint flavor will continue to appear at the same time. Because neotame has the characteristics of enhancing flavor, the amount of flavor in mint chewing gum can be reduced.
Adding method recommendations: Use propylene glycol as solvent - saturated solubility is 20%; use glycerin as solvent - saturated solubility is 10%; pre-mix with powdered sugar or other powder additives at a ratio of 1-2%.
­­ Note: It is not recommended to use flavors directly as solvents.
8. Application in table sweeteners
Because neotame is not hygroscopic and has low energy, it is very suitable as a table sweetener. Studies have shown that neotame can be stored for at least 156 weeks when used as a table sweetener.
9. Application in starchy foods
Adding neotame to starchy foods can inhibit starch aging and extend the shelf life of foods; adding it to protein-rich foods such as eggs and fish can inhibit protein denaturation and maintain a good taste of food.
10. Application in the medical field
Neotame is used as a sweetener in medicine, which only plays a role in modifying the taste and does not affect the efficacy.
Long-lasting aftertaste can mask the bitter taste in medicines or the peculiar smell of substances such as vitamins; small dosage will not increase the volume of tablets; used in oral liquids, the taste is clearer than using sucrose.
11. Application in toothpaste and cosmetics
Using neotame as a sweetener for toothpaste and mouthwash can effectively maintain the cool characteristics of the product. Neotame can also be used in cosmetics such as lipstick, lip balm and bath lotion.
12. Application in cigarette filters
The technical bottleneck of the sweetness of cigarette filters is that the sweetness lasts too short and cannot maintain the sweetness until the cigarette is finished. The aftertaste of neotame solves this problem well.
13. Application in animal feed
It can effectively mask the aftertaste of saccharin and improve the palatability of feed.
The daily feed intake of livestock is the main factor determining the growth rate of livestock, especially the daily feed intake of piglets and suckling pigs, which affects the entire growth process of livestock. Therefore, improving the palatability of feed can increase their daily feed intake, thereby accelerating the growth rate of livestock.
Livestock, especially young pigs and suckling pigs, have a more sensitive sense of taste than humans.
The following characteristics of neotame can make up for and improve feed sweeteners: pure sweetness, no bitter, astringent, or metallic odor;
The longer after-sweetness can mask the bitterness and metallic taste of saccharin, improve the taste characteristics of feed, and mask the odor; 14-24% synergistic effect with saccharin, 0.05-0.1% addition for low-grade feed, 0.15-0.25% addition for mid-grade feed, and 0.3% or more addition for high-grade feed.
14. Application in other products
Unlike aspartame, neotame can be used together with certain reducing sugars, such as glucose, fructose, lactose, etc.
