Papain is a pure natural bio-enzyme product extracted from the immature fruit of papaya plant by bioengineering technology. It is composed of 212 amino acids and has a molecular weight of 21,000. It belongs to the sulfhydryl (-SH) endopeptidase, which can hydrolyze the carboxyl end of arginine and lysine in proteins and polypeptides. It has protease and esterase activities, has a wide range of specificity, and has strong enzymatic hydrolysis ability for animal and plant proteins, polypeptides, esters, amides, etc. At the same time, it also has the ability to synthesize protein hydrolyzates and synthesize protein substances. This ability can be used to improve the nutritional value or functional properties of animal and plant proteins.

The Application Areas of Papain:
 
1. Food industry:
 
The enzymatic reaction of papain can hydrolyze the macromolecular protein in food into small molecular peptides or amino acids that are easy to absorb. It is widely used in: chicken, pig, cattle, seafood, blood products, soybeans, peanuts and other animal and plant protein hydrolysis, meat tenderizer, wine clarifier, biscuit loosening agent, noodle stabilizer, health food, soy sauce brewing and wine fermentation agent, etc., which can improve the nutritional value of food and reduce costs.
 
2. Biscuit industry:
 
Reduce the dough wet gluten, improve the dough plasticity and physical and chemical properties, and hydrolyze protein macromolecules into short peptides and amino acids, which is conducive to the complex Maillard reaction of sugars and amino substances, so that the product is fast in coloring, pleasing in color, oily and bright, loose and crisp, with large specific strength, obvious cross-sectional network structure, and good layers; the cracking and broken cake rate is reduced, the cake shape is straight and full without shrinkage, the pattern is clear, and the cake surface is smooth; and it can reduce 10%-25% of sodium metabisulfite accordingly, thereby reducing the residual amount of harmful substances such as SO2, and can also correct the influence of chemical additives on the flavor of biscuits, effectively improving the quality of biscuit products.
 
3. Pharmaceutical industry:
 
Drugs containing papain, such as papaya throat tablets, papaya enteric-coated tablets (capsules), and papaya lozenges, have anti-inflammatory, choleretic, analgesic, digestive, and immune-enhancing effects. Further studies have shown that it can also be used to check the surface of red blood cells and blood type identification agents, treat gynecological diseases, glaucoma, insect bites, etc.
 
4. Textile industry:
 
Wool shrinkage prevention: Wool treated with papain has a higher tensile strength than conventional methods, and the wool yarn feels soft, comfortable, shrinkage-resistant, tensile strength and other effects. The shrinkage is 0; it can also be used for silkworm degumming and silk refining.
 
5. Leather industry:
 
Papain is used to make leather depilatory and tanned leather. The leather tanned with this product has fine and bright pores.
 
6. Feed industry:
 
It decomposes protein in feed into amino acids, increases the exudation of nutrients, and is beneficial to the absorption and utilization of eggs by poultry. At the same time, it supplements the lack of endogenous enzymes in animals, improves feed utilization and reduces feed costs, enhances appetite, and then promotes animal growth, increases daily weight gain and vitality. It can also be used as an additive for advanced compound fertilizers for vegetables and fruits.
 
7. Daily chemical industry:
 
It is used for soap, soap, detergent, washing powder, hand sanitizer, etc. When clothes are contaminated by blood stains, milk, juice, soy sauce and grease, it is generally difficult to remove these stains if ordinary detergents are used. If protease is added to detergent, sweat stains and blood stains can be easily removed, with strong decontamination power, sterilization and disinfection, and safety.
 
In addition, it can also be added to toothpaste, mouthwash, tooth powder, etc. to clean the mouth, remove tartar and calculus, and can be made into a cleaning and disinfecting agent for contact lenses and the recovery of silver in photosensitive films with other solvents.
 
8. Cosmetics industry:
 
Papain acts on the aging stratum corneum of human skin, causing it to decompose and degenerate, and remove it to achieve the effect of skin rejuvenation and promote cell growth. The papain hydrolyzate forms a thin film of amino acid derivatives on the surface of the skin, keeping the skin moist and smooth. Papain easily forms a complex with the copper ions in the melanin that forms spots, reducing the formation of melanin and removing the melanin of spots. The tripeptide substance hydrolyzed by papain can directly inhibit the tyrosine activity of melanin formation and eliminate free radicals, thereby achieving the effect of whitening and removing spots.
 
Usage conditions:
 
Reaction temperature 50-55℃, the optimal temperature varies depending on the type and concentration of the substrate; the suitable pH value is 6-7, and the pH may vary depending on the type and concentration of the substrate; the addition amount is generally 0.1-0.3% (1000-3000u/g protein), and the amount can be appropriately increased or decreased according to different substrates, and the reaction time can be shortened or extended accordingly.
 
Enzyme inactivation conditions: The material system liquid temperature rises to above 85℃, and the temperature is maintained for more than 15 minutes.
 
The optimal amount of enzyme added must be determined according to the specific production situation.
 
Storage:
 
Storage temperature: 0~25℃, it is recommended to store in a cool and dry environment away from light, and refrigeration is more conducive to the preservation of enzyme activity;
 
Storage for too long or unfavorable storage conditions will reduce the enzyme activity to varying degrees; if the temperature and humidity are too high, it is necessary to increase the amount of use appropriately when using it.
 
Safety:
 
Papain is a pure natural enzyme preparation and a protein. Eating foods containing enzyme preparations is like eating foods containing protein, which is beneficial and harmless to the human body.
 
For some sensitive people, if highly concentrated enzyme powder or droplets are directly ingested, it may cause allergies, and prolonged contact may irritate the skin, eyes and mucous membranes. It is recommended to wear protective equipment such as masks and goggles during operation. The remaining or spilled enzyme powder needs to be handled in time. For a large amount of spilled enzyme powder, it should be gently swept back into the container, and a small amount should be vacuumed away or soaked in water to clean it.
 
Papain is a biologically active substance that is susceptible to the inhibition and destruction of heavy metal ions (Fe3+, Cu2+, Hg+, Pb+, etc.) and oxidants. Contact with them should be avoided during storage or use.
