Lemon yellow is also known as tartrate yellow, acid yellow, and hydrazine yellow. Its chemical name is 1-(4-sulfonate phenyl)-4-(4-sulfonate phenylazo)-5-pyrazolone-3-carboxylic acid trisodium salt, which is a water-soluble synthetic pigment. It is bright yellow and is a monochrome variety. It is mostly used for coloring food, beverages, medicines, cosmetics, feed, tobacco, toys, food packaging materials, etc. It is also used for dyeing wool and silk and making color lakes.

Lemon yellow is a water-soluble synthetic pigment with a bright yellow color and a monochrome variety. An appropriate amount of lemon yellow can be safely used for coloring food, beverages, medicines, cosmetics, feed, tobacco, toys, food packaging materials, etc. The synthetic pigments allowed for use in China are amaranth, carmine, lemon yellow, sunset yellow, and indigo.
 
They are used for fruit-flavored water, fruit-flavored powder, fruit dew, soda, mixed wine, red and green silk, canned food, and coloring the surface of pastries. These synthetic pigments do make the surface of food look particularly attractive, but they are prohibited from being used in the following foods: meat and its processed products (including processed viscera), fish and its processed products, fruit and its products (including juice, preserved fruit, jam, jelly and brewed fruit wine, condiments, infant food, biscuits, etc.
 
The reason why lemon yellow can be used as a food and drug colorant is that it is relatively safe, basically non-toxic, does not accumulate in the body, and most of it is excreted from the body in its original form. A small amount can be metabolized, and its metabolites are non-toxic to humans. The raw materials used in its production, p-aminobenzenesulfonic acid, tartaric acid and 2-naphthol-6-sulfonic acid, are basically non-toxic substances.
 
Therefore, the Food and Agriculture Organization (FAO) and the World Health Organization (WHO) gave it a very tolerant daily intake as early as 1994. If lemon yellow is used according to the standard, the amount entering the human body is far from the daily intake.
