Allure Red, also known as Brilliant Red, Alola Red, Edible Red No. 40 (Japanese name), has a molecular formula of C18H14N2Na2O8S2 and a relative molecular mass of 496.43. It is obtained by coupling 2-methyl-4-amino-5-methoxybenzenesulfonate with sodium α-naphthol-6-sulfonate after diazotization. It can be made into the corresponding aluminum precipitate.

Properties of Allure Red:

Allure Red is a dark red uniform powder, odorless. Soluble in water, soluble in glycerol and propylene glycol, slightly soluble in ethanol, insoluble in oils and fats. It dissolves in water to form a slightly yellowish red solution. It has strong light and heat resistance, poor alkali resistance and oxidation-reduction resistance. The properties are similar to other diazo red pigments. It has good tolerance to aqueous solutions containing sulfur dioxide or hydrogen ions (pH ≥ 3). It has strong color fastness. Soluble in water, neutral and acidic aqueous solutions are red, and alkaline solutions are dark red.

Uses of Allure Red:

As a food additive, Allure Red is widely used in the food industry. According to Chinese regulations, it can be used in candy coatings at a maximum of 0.085g/kg; in fried chicken seasonings, the maximum amount is 0.04g/kg; in ice cream, the maximum amount is 0.07g/kg. In addition, Allure Red is also used in meat sausages, Western ham, jelly, biscuit fillings, etc.
